Trying Something New

I have always been a sucker for trying new recipes. Once I made a cake that had sausage as one of its main ingredients. The ones who tried it said the spices did not cover up the taste of the meat. Oh well.

The other day I saw a recipe for meat loaf from Cracker Barrel. Had to try it. Very simple and the head of the household liked it. I'll make it again.

Cracker Barrel Meat Loaf

2 eggs
2/3 cup milk
32 Ritz crackers, crushed
1/2 cup chopped onion
4 oz. shredded cheese
1 tsp. salt
1/4 tsp. pepper
1 1/2 lb. ground beef

Beat eggs. add milk and crackers. Stir in onions and cheese. Add beef and mix well. Shape into a loaf.
Bake at 350 degrees 45 minutes. Add topping and bake 15 - 20 minutes longer.

Topping:
1/2 cup catsup
1/2 cup brown sugar
1 tsp. mustard

I skipped the topping.

  1. Sounds good, I just told Far Guy he will be eating this, we will be high protein for awhile.

    2. I changed the recipe a bit for us. I used 1 Ib of Hamburger, 1 egg, about 14 Ritz Bacon flavored crackers, 1/3 cup milk and 1 egg and some cheese I just dumped some in and salt and pepper. Onions really bother Far Guy he likes them but cannot breathe when they are cooking. I have this all mixed up and ready to go into the oven soon, I will report back later with the results!

    3. It was great! I will make it again! I put a mix of ketsup and Sweet Baby Rays BBQ sauce on it for about 15 minutes at the end.

    4. So glad you liked it. What is funny, I used 1 lb. of hamburger too and adjusted amounts like you did! I only had 1 lb. here.
